Dates Khoya Roll | Khajoor Mawa Roll

This mouthwatering and healthy sweet is my mother's recipes. It is a combination of dates, khoya(mawa) and dry fruit mix in form of roll. Dates(Khajoor) have enormous health benefits with rich vitamins, minerals, and fibers. Dates provide natural sweetness and khoya helps to form the texture of this delicious sweet.



INGREDIENTS: FOR 20-25 PIECES

Dates(Khajoor) chopped .... 1½ Cup
Sugar ....................................  Cup
Khoya(Mawa)........................ ¼ Cup
Ghee melted ......................... 3 Tbsp.
Milk ....................................... 2 Tbsp.
Coconut powder ................... ¼ Cup
Almond ................................. ¼ Cup
Cashew ................................ ¼ Cup
Coconut powder ............ As needed
Poppy seeds .................. As needed

DIRECTIONS:

  1. In pan roast almond and cashew on low flame for 2-3 minutes and keep it aside.  After it cools down, make a fine powder.
  2. Roast coconut powder as well and keep it aside.
  3. Melt the ghee in a non-stick pan.  Add chopped dates and keep mixing till it becomes soft and starts coming together on a low flame.  Let it cool at room temperature. 
  4. Take a dates mixture and keep between plastic sheets or zip lock bags and start rolling them with your hands and make a layer when it's little warm.
  5. Take khoya in the nonstick pan and cook it on medium heat.  Once khoya start getting soft add sugar and mix it well.
  6. After adding sugar it releases more water in the mixture so cook it on medium heat till all water gets evaporated.  Make sure to continuously stir the mixture else it might get burned.
  7. When all sugar water gets evaporated add milk, and cook 2-3 minutes more on a low heat.
  8. Then add almond - cashew powder, roasted coconut powder and mix well. 
  9. Take it out from heat and let it cool for some time.
  10. Then spread khoya mixture on top of dates mixture layer with the help of plastic sheet.
  11. Then start to fold the layer into a roll, use plastic sheet for folding, this way the dough won’t stick or break. (Make sure plastic sheet itself does not get rolled inside the roll.  Use it just to lift date khoya mixture for rolling purpose).
  12. Now gently roll it over poppy seeds and coconut powder and keep it aside. 
  13. After 1 hour cut it into 1cm thick slices.
  14. Enjoy this delicious and healthy dessert.
