Bottle Gourd Muthia | Delicious Gujarati Muthia

Bottle Gourd Muthia (dumpling) is famous Gujarati anytime meal. It is made from wheat flour, chickpea flour mixed with shredded bottle gourd and spices. It is steamed and tempered with oil and spices. It often served with tea or coffee.



INGREDIENTS: FOR 4-5 SERVINGS

Bottle gourd(Dudhi)shredded .. 2 Cup
Chickpea flour ........................ ½ Cup
Wheat coarse ...................... 1 ½ Cup
Yogurt ..................................... ¼ Cup
Garlic paste ....................... 1 ½ Tbsp.
Ginger paste ............................. 1 tsp.
Green chili paste .................... 1 Tbsp.
Red chili powder .................... 1 Tbsp.
Turmeric powder ..................... ¼ Tsp.
Salt ................................. As per taste
Sugar ...................................... 2 Tbsp.
Oil ........................................... 3 Tbsp.
Ajwain seeds ............................. 1 tsp.
Eno ............................................ 1 tsp.

FOR TEMPERING

Oil ......................................... 3 Tbsp.
Mustard seeds ..................... ½ Tbsp.
Sesame seeds ...................... 3 Tbsp.


DIRECTIONS:

  1. Mix chickpea flour, wheat coarse flour in a bowl.  Add oil, ajwain seeds, turmeric powder, red chili powder, green chili paste, salt, sugar, ginger-garlic paste, and mix well.
  2. Add shredded bottle gourd, yogurt, Eno, and knead into a soft dough.  
  3. Apply little oil on your hands and divide the dough into 8 equal portions. Shape each portion into a cylindrical roll.
  4. Arrange the rolls on a greased steamer plate and steam in a steamer for 40 to 50 minutes. Once it is steamed, turn off the heat and allow it cool down for ½ hours. Then slice each roll and keep it aside.
  5. For the tempering, heat the 3 tbsp. of oil in a big pan and add the mustard seeds. When the seeds crackle, add the sesame seeds. Then add sliced muthia and sauté on a medium flame for 2 to 3 minutes or till they turn light golden brown in color.
  6. Take it out from heat and serve with tea or coffee.
