Curd Rice | Yogurt Rice

Curd rice is very popular in the states of South India. In South Indian home cuisine, it is standard to eat curd rice at the end of lunch and dinner, which helps ease the effects of the spicy main dishes. It is also said to aid digestion.



INGREDIENTS: FOR 2 SERVINGS

Rice ............................... ½ Cup
Water .......................... 1 ½ Cup
Salt ........................ As per taste
Yogurt .............................. 1 Cup
Green chili chopped ....... 1 Tbsp.
Ginger paste ..................... 1 tsp.
Coriander chopped ........ 2 Tbsp.
Ghee melted .................. 2 Tbsp.
Mustard seeds ............... 1/2 tsp.
Urad dal ............................ 1 tsp.
Cumin seeds ................... ½ tsp.
Asafoetida ....................... ½ tsp.
Curry leaves ........................ 3-4
Red chili whole .................. 2 Pc




DIRECTIONS:

  1. Wash rice 2-3 times well then transfer into a heavy bottom pan. Add water and salt and cook on medium heat. 
  2. When rice is fully cooked take it out from heat and let it slightly cool down.
  3. Transfer cooked rice in a big bowl.  Add yogurt, green chili chopped, ginger paste, coriander leaves chopped, a little salt and mix well.  
  4. Heat ghee in the pan and add mustard seeds. When mustard seeds crackle adds urad dal, cumin seeds, asafoetida, red chili whole and curry leaves. 
  5. Add this tempering into the rice bowl and mix well.
  6. Curd rice is ready for serve.
