Khaman | Famous Khaman Dhokla

Khaman or Khaman Dhokla is a food common in Gujarat made from gram flour(Besan). Khaman is so soft and spongy in texture. This recipe is easy to implement if you follow instructions properly and practice it a bit. Khaman is mostly served with fried chilies and Kadhi chutney.





INGREDIENTS: FOR 25-30 PIECES

FOR batter:

Gram Flour .................... 1½ Cups
Salt ........................... As per taste
Sugar ................................ 3 Tbsp.

Turmeric powder ................. Pinch
Asafoetida ........................... Pinch
Water ............................ 1
½ Cups
Lime Juice ........................ 2 Tbsp.
Eno ................................... 1 Tbsp.



FOR tempering
Oil ...................................... 4 Tbsp.
Mustard seeds ..................... 1 Tsp
Water .................................. 1 Cup
Sugar ................................. 2 Tbsp.
Green chili slices ................. 12-15
Coriander leaves .... For Garnishing


DIRECTIONS:
  1. In bowl mix gram flour(besan), turmeric powder, sugar, asafoetida, and salt.  Add water and prepare the smooth batter.  Keep batter aside for 2 hours.
  2. Put greased ( 9 - 12”) diameter thali in a steamer on high flame.  Steam for about 8-10 minutes or until thali has become hot. ( Remember do not pour batter in thali until it is really hot).
  3. Add lime juice to the batter and mix well. Sprinkle Eno on the batter and pour 2 tbsp. of water on it.  Wait for 30 seconds and when the bubbles form, mix gently and pour immediately into a hot greased thali. 
  4. Steam for 15 minutes.  Once it is steamed, open its lid and turn off the heat.  
  5. Allow it to cool down for 5 minutes. Then cut into a 1½ inch by 1½ inch square pieces.
  6. Melt 3 tbsp. of sugar into the ⅔ cup of water and keep it aside.
  7. For the tempering, heat 4 tbsp. of oil in a pan, add mustard seeds. When the seeds crackle, add green chili slices. Add sugar water into tempering and sprinkle this tempering onto khaman pieces. 
  8. Garnish with coriander leaves chopped and serve with Kadhi chutney or Tea/Coffee.
