Rajgira Paratha | Amaranth Potato Paratha | Farali Roti | Fasting Paratha

Rajgira(amaranth)paratha is very nutritious dish usually eaten during fasting. Rajgira flour is high in iron, is fiber-rich, has calcium and protein too. It is also gluten-free. And with potatoes, it becomes soft and delicious. It goes well with yogurt, chutney or tea.



INGREDIENTS: FOR 6 parathas

Rajgira(amaranth)flour .....  1 Cup
Potato boiled ..............  2 Medium
Coriander chopped .........  2 Tbsp
Ginger paste ......................  1 Tsp
Green chili paste ............  ½ Tbsp
Black pepper powder .......  ½ Tsp
Salt ...........................  As needed
Water ........................  As needed
Ghee ........................  As needed

DIRECTIONS:

  1. Peel the skin of boiled potatoes and mash with masher properly.
  2. Mix Rajgira (amaranth) flour and mash potato in a bowl.  Add black pepper powder, salt, green chili paste, ginger paste, coriander leaves chopped and knead into a  stiff and smooth dough using enough water.  
  3. Now make 6 equal balls out of the dough.  Apply Rajgira flour to the ball.  Now start rolling the ball into flat 5” round. Alternatively, you can also dust the rolling board with Rrajgira flour. 
  4. Now heat a  tava and cook paratha till golden brown spots appear on both the sides. Then apply little ghee on both the sides of thepla and remove from the heat. 
  5. Prepare remaining parathas like this.
  6. Serve hot with fresh yogurt, green chutney or tea.
