Bajri Methi Muthia | Millet Muthia With Fenugreek Leaves | Methi Dumpling

Bajri methi muthia is delicious Gujarati snack for light dinner or breakfast. It is prepared by rolling and steaming bajri (millet) flour dough with mixing fresh methi leaves and spices. It is served with tea, sauce or chutney and good lunch for kids as well.



INGREDIENTS: for 3-4 servings

Methi leaves chopped .........  1 Cup
Bajri flour .............................  1 Cup
Gram flour ..........................  ½ Cup
Wheat coarse .....................  ½ Cup
Yogurt .................................. ¼ Cup
Garlic paste ...................  1 ½ Tbsp.
Ginger paste .........................  1 tsp.
Green chili paste ................  1 Tbsp.
Coriander leaves chopped ..  ¼ cup
Red chili powder ................  1 Tbsp.
Turmeric powder ..................  ¼ tsp.
Salt .............................  As per taste
Sugar ..................................  3 Tbsp.
Oil .......................................  3 Tbsp.
Ajwain seeds .........................  1 tsp.
Eno ........................................  1 tsp.
Water ...........................  As Needed


FOR tempering:


Oil .....................................  3 Tbsp.
Mustard seeds .....................  1 tsp.
Sesame seeds ..................  3 Tbsp.

DIRECTIONS:
  1. Mix bajri(millet) flour, gram flour(besan), wheat coarse flour in a bowl.  Add oil, ajwain seeds, turmeric powder, red chili powder, salt, sugar, ginger garlic paste, and  mix it well.
  2. Add chopped methi leaves,coriander leaves, green chili paste, yogurt, Eno and knead into a soft dough using enough water.
  3. Apply little oil on your hands and divide the dough into 6 equal portions. Shape each portion into a cylindrical roll.
  4. Arrange the rolls on a greased steamer plate and steam in a steamer for 40 to 50 minutes. Once it is steamed, turn off the heat and allow it cool down for ½ hours. Then slice each roll and keep it aside.
  5. For the tempering, heat the 3 tbsp of oil in a big pan and add the mustard seeds. When the seeds crackle, add the sesame seeds.
  6. Then add sliced muthia and sauté on a medium flame for 2 to 3 minutes or till they turn light golden brown in color.
  7. Serve hot with tea or coffee.
