Coconut Cookie | Coconut Biscuit

Coconut lovers, rejoice! Finally, here's a recipe for mouth-watering coconut cookies. We all love baking cookies in our home, so I started from scratch and used the basic structure of my nan khatai recipe. Then I added and subtracted and tweaked until I landed here. This recipe has all purpose flour(maida), butter, sugar, and coconut. Very crispy and yummy.



INGREDIENTS: FOR 15 cookies

Maida (all purpose flour) .... ¾ Cup
Coconut powder ................ ½  Cup
Baking powder  .................... ¼ tsp.
Baking soda ......................... ¼ tsp.
Butter ...............................  ½  Cup
Sugar ................................ ½  Cup
Crystal brown sugar .... As needed 

DIRECTIONS:

  1. Keep butter at the room temperature till it becomes soft but not melted.
  2. In a bowl, mix the all-purpose flour, coconut powder, baking powder and baking soda.
  3. Take soft butter and sugar in a bowl and beat for two to three minutes until it became light and fluffy.
  4. Add the flour mixture and knead them together to make a smooth dough.
  5. Preheat the oven to 300 degrees.
  6. Divide the dough into 15 equal parts and make them into balls.
  7. Press each ball between your palms and make oval or round shape cookie.  Deep cookie into crystal brown sugar and press them gently.
  8. Put coconut cookie on a lightly greased cookie sheet and bake at 300 degrees for about 20 to 25 minutes or until cookies are lightly golden brown.
  9. After they are lightly golden brown remove the cookie sheet from the oven.   Let them cool completely then store in airtight container.
