Dal Baati | Famous Rajasthani Dish - Dal Baati

Dal baati is simple, nutritious and wholesome Rajasthani meal. Dal is made with a number of different types of lentils which are cooked along with the assorted Indian spices. Baatis are traditionally roasted in an open coal fire but you can also cook them in your oven. They are always served dipped in ghee accompanied with dal and churma.



INGREDIENTS: 

FOR 3-4 servings dal: 

Urad dal ...............................  ½ Cup
Yellow moong dal .................  ¼ Cup
Chana dal .............................  ¼ Cup
Tomato chopped ....................  1 Cup
Ginger paste .......................  ½ Tbsp.
Ghee (melted) ....................... 3 Tbsp.
​Mustard seeds .......................... 1 tsp.
Cumin seeds ............................ 1 tsp.
Asafoetida ..............................  ½ tsp.
Whole chili dry ............................... 2
Bay leaves ..................................... 2
Cinnamon stick ...................... 1 Inch
Curry leaves  .............................. 7-8
Green chili paste ....................  1 tsp.
Red chili powder ..................  1 Tbsp.
Turmeric powder ..................  ½ tsp.
Amchur powder ......................  1 tsp.
Garam masala powder .........  ½ tsp.
Salt ............................... As per taste
Coriander leaves chopped ... 3 Tbsp.
Water ............................  5 to 6  Cup

FOR 10 Baati: 

Wheat flour coarse ...............  1 Cup
Wheat flour ..........................  ½ Cup
Gram flour ...........................  3 Tbsp.
Salt ............................... As per taste
Ajwain seeds .......................... ½ tsp.
Ghee (melted) ....................... 4 Tbsp.
Baking powder ......................  ¼ tsp.
Water .............................  As needed


DIRECTIONS:

FOR DAL: 

  1. Wash all dals together 2-3 times. Then pressure cook with salt and 4 cup water for 2 whistles or until dal cooked but not overcooked.
  2. Heat ghee in a pan adds mustard seeds. When mustard seeds crackle adds cumin seeds, whole chili dry, bay leaves, cinnamon stick, asafoetida and curry leaves.
  3. Add green chili and ginger paste. Sauté for few seconds then add turmeric powder, red chili powder, and chopped tomatoes. Mix well and cook on a medium flame for 3-4 minutes.
  4. When tomato cooked properly add the prepared cooked dals with water, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally. ( Here you can add more water as per your need.)
  5. Now add garam masala powder, amchur powder, and chopped coriander leaves.  Mix well and take it out from heat.

FOR BAATI: 

  1. Take wheat flour coarse, wheat flour and gram flour in a bowl. Add salt, ajwain seeds, baking powder, and ghee. Combine all the ingredients and knead into a hard dough, using enough water.
  2. Preheat the oven to 350 degrees F.
  3. Divide the dough into 10 equal parts and make them into balls. Flatten each ball into 2-inch diameter circle by pressing between palms.
  4. Put all baatis on a lightly greased cookie sheet and bake at 350 degrees for about 20 minutes. Cooking the baatis over a medium flame will ensure that the baatis are cooked on the insides also.
  5. After 20 minutes turn all baatis and baked again for about 15-20 minutes more. When baatis are golden brown color on both the sides remove them from the oven.
  6. Dipped hot baatis into ghee for about minute then remove. Break baatis into pieces dipped in dal and enjoyed.
