Palak Puda | Spinach Chilla | Besan Puda With Spinach

Palak(Spinach) Puda is similar to besan puda, is made from besan, yogurt, chopped palak and spices. It is a quick recipe and use of palak make the dish healthy and delicious. You can serve palak puda for breakfast or dinner.




INGREDIENTS: for 7-8 pudas

Chickpea flour  ...............  1  Cup
Yogurt ............................... 1 Cup
Green chili chopped ........ 1 Tbsp
Red chili powder ...............  1 Tsp
Turmeric powder .............  ¼ Tsp
Salt ........................  As per taste
Ajwain seeds ....................  1 Tsp
​Water ..............................  1 Cup
Oil ............................  As needed

FOR tempering:

Oil ................................... 2 Tbsp
Mustard seeds .................. 1 Tsp
Asafoetida ....................... ½ Tsp
Onion finely chopped ..... ½ Cup
Garlic paste .................... 1 Tbsp
Palak(spinach) chopped .. 2 Cup



DIRECTIONS:
  1. In bowl mix chickpea flour, yogurt, red chili powder, green chili chopped, salt, turmeric powder and ajwain seeds. Add water as needed and prepare the batter.  Keep batter aside for half an hour.
  2. In a pan take 2 tbsp oil and heat it up. Add mustard seeds and when it starts to crackle add asafoetida garlic paste, finely chopped onion. Saute for a minute then add chopped palak(spinach) and mix well. Saute’ for a couple of minutes then remove from the heat. Add this mixture to puda batter.
  3. Take a flat pan and heat it up. Take one big spoon of batter and spread it on a pan in round shape.  Drizzle a little oil on top and let it cook for a couple of minutes.
  4. Then flip the puda and allow it to cook on the other side till light golden-brown spots appear.
  5. Hot puda can be served with tomato sauce or coriander - mint chutney.
