Pav Bhaji

Pav bhaji is a Maharashtrian fast food dish that originated in Mumbai cuisine. The pav-bhaji is a spicy preparation with a mixture of vegetables garnished with coriander chopped onion, and a dash of lemon and lightly toasted pav. It can be eaten as a snack or as a meal in itself.




INGREDIENTS: for 4-5 servings

Potato medium ..............................  3
Cauliflower pieces ..................  1 Cup
Green pepper pieces .............  1 Cup
Red pepper pieces .................  1 Cup
Fresh or frozen peas ............. ½ Cup
Onion finely chopped .............. 1 Cup
Tomato finely chopped .......... 2 Cups
Garlic paste ..........................  3 Tbsp.
Pav bhaji masala ..................  2 Tbsp.
Butter  ...................................  4 Tbsp.
Oil .........................................  4 Tbsp.
Red chili powder ...................  1 Tbsp.
Kasoori methi ........................  2 Tbsp.
Salt ................................ As per taste
Water ..............................  As needed


FOR SERVINGS:

Pav ................................. As needed
Butter .............................. As needed
Onion finely chopped ...... As needed
Lime pieces .................... As needed
Coriander chopped ......... As needed



DIRECTIONS:
  1. Peel potato skin and wash properly.  Cut in big cubes and put in cooker.  Add peas, cauliflower pieces, red and green pepper pieces.  Add water as needed and pressure cook for 2 whistles. Take it out from heat and let it cool for 15-20 minutes before opening pressure cooker. Drain water from vegetable and keep it aside.
  2. Heat oil in a pan, add garlic paste and saute’ for seconds.  Add chopped onions and saute’ till it became soft.
  3. Add chopped tomatoes and mix well. Cook over medium heat for a couple of minutes. Add pav bhaji masala, red chili powder, salt and mix well. Continue to cook on medium heat till tomatoes cook properly.
  4. Then mash cooked onions and tomatoes with the masher. Add boiled vegetables (without water) and mash it again properly.
  5. Add leftover vegetable water as needed and mix well.  Cover it and let it cook on medium heat till water mix with gravy.  
  6. Add butter and crushed kasoori methi.  Mix well and cook 2-3 minutes more then remove bhaji from the heat.
  7. Cut each pav from middle and apply a little butter on each side. Heat a large tawa and cook the pav on both sides till the pieces are lightly browned.
  8. Serve hot pav with bhaji garnish with chopped onions, butter, coriander leaves and lime juice.
