Sev usal in Gujarat is little different from traditional Maharashtrian dish usal pav. In this recipe, Jaggery or sugar will be added like, all other Gujarati dishes. Usal is gravy made from dry green peas and served with sev, exotic chutneys, onion, tomato and coriander leaves.



INGREDIENTS: for 3-4 servings

Green dry peas ......................  1  Cup
Water ................................ As needed
Oil ........................................... 3 Tbsp.
Mustard seeds ..........................  1 tsp.
Asafoetida ...............................  ½ tsp.
Curry leaves ................................. 7-8
Garlic paste ...........................  1 Tbsp.
Ginger paste .............................  1 tsp.
Green chili paste ...................  ½ Tbsp.
Red chili powder ...................  ½ Tbsp.
Turmeric powder ....................   ¼ tsp.
Jaggery ................................... 3 Tbsp.
Tamarind paste ...................... ½ Tbsp.
Salt ................................... As needed

FOR SERVINGS:

Besan sev fine ................. As needed
Onion finely chopped ....... As needed
Tomato finely chopped ..... As needed
Coriander leaves .............. As needed
Coriander mint chutney .... As needed
Tamarind dates chutney ... As needed


DIRECTIONS:
  1. Soak dry green peas for 4 to 5 hours then pressure cook with salt and 3 cups of water for a 6-7 whistle or until it properly cooked.
  2. Take it out from heat and let it cool for 15-20 minutes before opening pressure cooker.
  3. Heat oil in a pan, add mustard seeds.  When seeds crackle adds curry leaves, asafoetida, garlic paste and saute’ for seconds.  Add boiled green peas with water and mix well.
  4. Add ginger paste, green chili paste,  red chili powder, salt, jaggery, turmeric powder and mix well.  Continue to cook on medium heat.  
  5. Add more water as needed and let it cook on medium heat till water mix with gravy. 
  6. Add tamarind paste and cook 2-3 minutes more then remove usal from the heat.
  7. Serve hot garnish with besan sev, chopped onions, tomatoes, coriander leaves, coriander mint chutney and tamarind dates chutney.
