Tikha Ganthia | Jadi Sev | Gram Flour Snack

Tikha ganthia is simply made from gram flour and Indian spices. It’s commonly known as jadi sev or ganthiya in Gujarat.  Tikha ganthia are great Diwali snacks also taste great with a cup of tea.  Apart from the ingredients, you will need sev ganthia machine which has different plates to make various sizes of sev.  This is sold in most Indian grocery shops.



INGREDIENTS: 

Gram flour(besan) .............  2 Cup
Salt ........................... As per taste
Ajwain seeds ....................  1/2 tsp.
Black pepper crushed ......  1/2 tsp.
Red chili powder .................  1 tsp.
Turmeric powder ................  Pinch
Hot oil ............................... 2 Tbsp.
Water .......................... As needed
Oil ............................  For deep fry


DIRECTIONS:
  1. In a bowl take gram flour(besan), black pepper crushed, ajwain seeds, red chili powder, salt, turmeric powder and mix well. Then add water gradually as needed and knead into a soft dough.  
  2. Add hot oil and mix well with a spoon.  Cover it and keep it aside for 15-20 minutes.
  3. Heat oil in a pan over medium heat.
  4. Take greased sev-ganthia machine(chakli maker) with thick sev ( the plate with large holes) attachment.  Fill batter on it and close tightly.
  5. Once the oil is ready to press the dough into circular motion and press out thick strands into the hot oil. Deep fry on a medium flame till light brown and crisp.
  6. With the help of slotted spoon remove extra oil and place them on an absorbent napkin.
  7. Repeat the same process for remaining batter.
  8. Allow them to cool and store in an airtight container.
