Upma | Suji Upma | Rava Upma

Upma is a common South Indian breakfast dish. The word 'Uppu' in Tamil means Salt and the word 'Mavu' in Tamil means flour and hence the dish is called Upma in Tamil. Upma is usually made with suji(Rava). There are many ways upma is prepared, and this recipe is one of them.



INGREDIENTS: for 3-4 servings

Suji coarse(Rava)..................  1 Cup
Ghee melted ........................ 1 Tbsp.
Oil ...................................  2+2 Tbsp.
Mustard seeds ...................  1½ Tsp
​Urad dal ..............................  3 Tbsp.
Asafoetida ...........................  ½ Tsp
Curry leaves ............................  7-8
Onion chopped ..................  ½ Cup
Green chili paste ..............  ½ Tbsp.
Ginger paste .....................  1 Tbsp.
Salt .............................  As per taste
Fresh coconut grated .......... ½ Cup
​Coriander leaves chopped .. 2 Tbsp.
Water .................................  4 Cups



DIRECTIONS:
  1. Roast suji coarse(Rava) with 2 tbsp oil in a pan on low heat till light pink color.  Keep it aside.
  2. Boil 4 cups water in the separate pan for about 7-8 minutes.
  3. Take 2 tbsp oil in pan and heat over medium flame.  Add mustard seeds, when mustard seeds crackle add curry leaves, asafetida, and urad dal.  
  4. When urad dal turns golden brown, add chopped onions.  Saute’ on medium heat till onions become translucent. Add green chili, salt and ginger paste, mix well.
  5. Add roasted suji(Rava) and mix well.  
  6. Now add boiling water little at a time, stirring constantly to avoid lumps. Stirring constantly till it becomes little thick.
  7. Cover it and let it cook on low flame for a couple of minutes. Add grated fresh coconut, chopped coriander leaves, and 1 tbsp. ghee. Mix well and let it simmer for 3-4 minutes on low flame.  
  8. Switch off the flame and serve hot with coconut chutney.
