Vegetable Upma

Vegetable upma is an excellent breakfast which is healthy too. It is a colorful and flavored dish which is made from rava(suji), mix vegetable, onions, and spices. It is easy and quick to prepare and taste awesome.



INGREDIENTS: for 2-3 servings

Suji coarse ...........................  1 Cup
Mix vegetables ...................... 1 Cup
Ghee melted .................... 1+2 Tbsp.
Mustard seeds .......................  1 tsp.
​Urad dal ..............................  1 Tbsp.
Curry leaves .............................  7-8
Peanut crushed ..................  2 Tbsp.
Onion chopped ...................  ½ Cup
Green chili chopped ...........  1 Tbsp.
Ginger paste ..........................  1 tsp.
Salt ..............................  As per taste
Water ....................................  3 Cup


DIRECTIONS:
  1. Take suji and 1 Tbsp. ghee in pan and roast on low heat till light pink color.  Then keep it aside.
  2. Take 2 tbsp ghee in pan and heat over medium flame.  Add mustard seeds, when mustard seeds crackle add urad dal, curry leaves, crushed peanut, and onion chopped.  While sauteing’ onion, add green chili chopped, ginger paste and mix well.
  3. Then add mix vegetable (peas, corn, beans, carrot) and mix well.  Cover it and let it cook over medium heat.
  4. After 3-4 minutes add 3 cups of water, salt and mix well.  Cover it again and let it cook till vegetables are cooked.
  5. Add roasted suji and mix well.  Cover it and let it cook on low flame. Then switch off the flame and let it simmer for 8-10 minutes.
  6. Serve with tea/coffee or coconut chutney.
