Aloo Gobi | Potato Cauliflower Subji

Aloo gobi is delicious dry subji made with potatoes(aloo), cauliflower (gobi) and Indian spices. Preparing the Aloo gobi is quite simple and if you cook it with less oil It's become healthful low calorie, high fiber food. So, try this recipe and make your favorite dish in a healthy way.




INGREDIENTS: for 3-4 servings


Potato pieces  ....................  2 Cups
Cauliflower pieces  .............. 2 Cups
Onion finely chopped ........ ½ Cups
Tomato finely chopped ........  1 Cup
Garlic paste .......................  ½ Tbsp.
Ginger paste ......................  ½ Tbsp.
Oil ....................................  3+2 Tbsp.
Asafoetida .............................  ½ tsp.
Cumin seeds ........................... 1 tsp.
Green chili paste ...............  ½ Tbsp.
Red chili powder ...............  ½ Tbsp.
Turmeric powder .................... ¼ tsp.
Coriander chopped ............. ¼ Cup
Kasoori methi ......................  2 Tbsp.
Coriander-cumin powder ... ½ Tbsp.
Garam masala powder ........  ½ tsp.
Salt ............................... As per taste
Water .................................... ½ Cup



DIRECTIONS:
  1. In a pan heat 3 tbsp of oil.  Add potato pieces and mix well.  Cover it and let it cook on medium heat for 3-4 minutes. Add cauliflower pieces and cook till vegetables are completely cooked.
  2. Remove pan from heat and keep it aside.
  3. Heat 2 tbsp of oil in another pan, add cumin seeds.  When the seeds crackle, add asafoetida and finely chopped onions. While sauteing’ onions, add ginger, garlic, green chili paste and mix well.
  4. Saute’ for a minute and then add tomatoes and cook on medium flame. When tomatoes cooked properly add red chili powder, turmeric powder, coriander-cumin powder, kasoori methi, salt and ½ cup of water. Mix well and cook for a minute more then add cooked potatoes and cauliflower. Cook 2-3 minutes more then add coriander leaves chopped and garam masala powder. 
  5. Mix well and Aloo gobi is ready for serve.
