Aloo Paratha | Stuffed Potato Paratha

Aloo paratha is the delicacy of North India but over the years has become very popular in all over India. Instead of preparing the plain roti it is preferable to prepare stuffed parathas since you get a vegetable intake as well. So try this yummy recipe of aloo paratha.



INGREDIENTS: for 8 parathas

FOR dough:

Wheat flour ......................... 1½ Cup
Oil ......................................... 2 Tbsp.
Salt ................................  As needed
Water .............................  As needed

FOR stuffing:


Boiled potato ..................  4 Medium
Onion chopped ...................  ½ Cup
Oil ........................................  2 Tbsp.
Green chili paste ...............  ½ Tbsp.
Coriander leaves chopped ... 2 Tbsp.
Ginger paste ............................ 1 tsp.
Amchur powder ....................... 1 tsp.
Turmeric powder .................... ½ tsp.
Coriander-cumin powder ...... 1 Tbsp.
Red chili powder ................. ½ Tbsp.
Lime juice ................................ 1 tsp.
Salt ................................. As needed
Butter/Ghee ...................  As needed


DIRECTIONS:
  1. Take wheat flour in a bowl add 2 tbsp oil and salt and knead into a soft dough, using enough water. Cover dough and Keep aside for 30 minutes. 
  2. Peel the skin of boiled potatoes and grate with greater properly and keep it aside. Make sure there is no lump in grated potato otherwise you can not able to roll paratha properly. 
  3. Take 2 tbsp oil in a pan and heat it up. Add chopped onions and saute’ for 2-3 min. Then add ginger paste, green chili paste and saute for a minute. 
  4. Then add salt, turmeric powder, coriander-cumin powder, red chili powder, amchur powder, chopped coriander leaves and grated boiled potatoes. 
  5. Mix well all ingredients and saute for a minute. Add lime juice and mix well. Take it out from heat and let it cool for some time. 
  6. Divide the mixture and dough both into 8 equal parts. Take one part of the dough and make a small chapati and stuff the one part of potato masala into it and close it properly from all side. Now roll out paratha into a circle of 7" diameter, using a little flour for rolling. 
  7. Now heat a tawa and cook paratha till it turns golden brown in color from both sides. spread butter or ghee on top. Repeat the same process for rest. 
  8. Aloo paratha can be served with yogurt, pickle, or tea.
