Brown Rice Pulao | Vegetable Brown Rice Pulao

Brown rice pulao is very healthy rice dish. Various vegetables and spices make this dish rich and tasty. It can be served as the main course with or without yogurt.



INGREDIENTS: for 4-5 servings

Brown rice ...............................  1 Cup
Carrot slices ............................. 1 Cup
Green peas ...........................  ¼ Cup
Cauliflower pieces ................... 1 Cup
Cut corn .................................  ¼ Cup
Onion slices ............................. 1 Cup
Tomato chopped .....................  1 Cup
Red pepper slices .................. ½ Cup
Ghee (melted) .......................  2 Tbsp.
Oil ........................................... 2 Tbsp.
Cumin seeds ........................  1  Tbsp.
Whole garam masala  .. 2 pcs (Each)
Ginger paste .........................  1 Tbsp.
Turmeric powder ....................  ¼ Tsp.
Red chili powder ...................  1 Tbsp.
Salt ................................  As per taste
Coriander leaves ................... ½ Cup
water …………………..………3 Cups


DIRECTIONS:
  1. Wash and soak brown rice for 2-3 hours. 
  2. Take 1 Tbsp ghee in a rice cooker, and heat it up. 
  3. Add peas, carrots, corn and mix it well. saute for a couple of minutes and then add soaked brown rice, salt and 3 cups of water, cover it and cook till it done. Let it cool down for half an hour.
  4. Mix ghee and oil in pan and heat over medium flame. Add cumin seeds, when cumin seeds crackle add clove, green cardamom, cinnamon stick (2 pcs each), saute’ for few seconds, then add onions. 
  5. While sauteing’ onion, add salt and ginger paste and mix well. 
  6. Then add cauliflower and mix well. cover it and let it cook over medium heat, till cauliflower is a half cook. 
  7. Now add red pepper slices and mix well. Cover it and let it cook for some time. 
  8. After vegetables are almost done add tomatoes, red chili powder, turmeric powder, and mix well. Cook for 2-3 minutes more then add cooked brown rice. Mix well, cover it and let it simmer for few minutes.Remove pan from heat. 
  9. Garnish with coriander leaves and serve hot with raita.
