Dalia Pulao | Mix Grain Pulao

Dalia pulao is the simple and healthy version of pulao. Dalia or broken wheat is very healthy, nutritious, high in iron & fiber. Dalia is cooked along with broken rice and kodri. And then mixed with stir fried vegetables. You may mix other grains like Jowar or Millet with dalia to make it more delicious.



INGREDIENTS: for 3-4 servings

FOR Dalia:

Dalia .....................................  1 Cup
Split rice ..............................  ¼ Cup
Ghee ...................................  1 Tbsp.
​Cumin seeds ..........................  1 tsp.
Salt ..............................  As per taste
Water ....................................  3 Cup

FOR pulao:

Onion slices .......................  ½ Cup
Mix vegetables ...................... 1 Cup
Tomato chopped .................  ½ Cup
Ghee (melted) .....................  1 Tbsp.
Oil ........................................ 1 Tbsp.
Broken Cashew .................  3 Tbsp.
Cumin seeds ......................  1 Tbsp.
Ginger paste .......................  1 Tbsp.
Green chili chopped ...........  2 Tbsp.
Salt .............................  As per taste
Coriander leaves chopped .. ¼ Cup


DIRECTIONS:
  1. Take 1 tbsp ghee in the pressure cooker, and heat it up. 
  2. Add cumin seeds, when seeds crackle add dalia(wheat fada) and split rice(kanki) ,3 cups of water and salt and mix it well. Then pressure cook for 5 whistles. 
  3. Mix ghee and oil in pan and heat over medium flame. Add cashew pieces, saute’ for few seconds then remove and keep it aside. Add cumin seeds, when cumin seeds crackle add onion slices. While sauteing’ onion, add salt, ginger paste and mix well. 
  4. Then add mix vegetable and mix well. Cover it and let it cook over medium heat. 
  5. After vegetables are almost done add tomatoes, green chili chopped, and mix well. Cook for 2-3 minutes more, then adds cooked dalia and mix well. 
  6. Garnish with roasted cashew and chopped coriander leaves. 
  7. Serve hot with yogurt or raita.
