Kaju Katli | Cashew Burfi

Kaju katli/Kaju Katri/ Kaju barfi is an Indian dessert made from kaju(cashew) powder and sugar syrup. It is the most famous sweet in all over India. Kaju katli is a delicious treat relished on festivals or occasions.




INGREDIENTS: for 30 - 35 pieces

Cashew ......................... 2½ Cup
Sugar ................................ 1 Cup
Water ............................... ½ Cup
Ghee melted ..................  2 Tbsp.

DIRECTIONS:

  1. Grind cashew in the grinder and make a fine powder. (Do not grind the cashew which is cold, taken from the fridge, grind it when it is at room temperature). 
  2. Take sugar and water In the thick bottom pan. Boil sugar syrup over medium heat and stir continuously. Take little water in a small bowl and just pour few drops in the water to check the consistency. If it should lay a fine thread that doesn’t get dissolved in water immediately when you touch. 
  3. Add cashew powder and stir the mixture continuously on a low flame. When its starts coming together and look like soft dough removes from the heat and transfer into a greased flat surface. Let it cool for some time. 
  4. When the mixture is still warm, add ghee and knead well. Keep kneading till it becomes smooth in texture. (If the dough looks dry or dense, add 1 tsp of milk to soften it). 
  5. Gently roll with a rolling pin to a thin smooth layer. Cut into diamond shape pieces. Let it cool for some time then remove pieces. 
  6. Now kaju katli is ready to enjoy. You can store kaju katli for a month in airtight container.
