Kesar Moriya Khichdi | Saffron Flavored Fasting Khichdi

Kesar moriya khichdi is very popular Gujarati khichdi mostly made during fasting. Kesar (saffron) gives exotic color and flavor.




INGREDIENTS: for 3-4 servings

Moriyo (Samo)......................  1  Cup
Potato …………............... 2 Medium
Ghee ..................................... 2 Tbsp.
Cumin seeds ......................  ½ Tbsp.
Green chili paste ............... 1½ Tbsp.
Curry leaves  ............................  7- 8
Peanut crushed ……............. ¼ Cup
Ginger paste ...........................  1 tsp.
water …………………………...3 Cup
Kesar(saffron) ......................... ¼ tsp.
Salt ...............................  As per taste


DIRECTIONS:
  1. Wash moriyo (samo) for 2-3 times. Wash, peel and chop potatoes into small pieces. 
  2. Heat the ghee in a pan, add cumin seeds when seeds crackle adds curry leaves, green chili paste, ginger paste, peanut crushed, potatoes and sauté for a couple of minutes. Add moriyo(samo), water and salt mix it well, cover and cook for 5 minutes on low flame. 
  3. Add kesar(saffron) and mix well, cover and cook on low flame until all water part dissolves. 
  4. Remove from the heat and keep aside for 5 minutes. 
  5. Moriya khichdi is served with “Peanut kadhi” or “Yogurt”.
