Pumpkin Subji | Kaddu Ki Subji

Pumpkin(Kaddu) subji is a sweet, sour and spicy dish. It is a very popular North Indian dish served with a puri, roti or any Indian flat bread.



INGREDIENTS: for 3-4 servings

Pumpkin(Kaddu) cubes  ......... 4 Cup
Tomato chopped ......................1 Cup
Oil .........................................  3 Tbsp
Cumin seeds ............................ 1 tsp.
Asafoetida .............................  ½ tsp.
Curry leaves  .............................. 6-7
Whole red chili  .......................... 2-3
Bay leaves ................................. 2-3
Green chili paste ....................  1 tsp.
Ginger paste ...........................  1 tsp.
Red chili powder ................  ½ Tbsp
Turmeric powder ...................  ¼ tsp.
Sugar .................................  ½ Tbsp
Salt ............................... As per taste
Water ...................................... 1 Cup
Coriander leaves chopped ...... Tbsp
Kasoori methi .......................  1 Tbsp


DIRECTIONS:
  1. Peel kaddu(yellow pumpkin) skin and cut into small cubes.
  2. Heat oil in a pan and add cumin seeds. When the seeds crackle, add asafoetida, bay leaves, whole red chili, curry leaves and kaddu(pumpkin) cubes. Mix well and saute for 2-3 minutes.
  3. Add ginger and green chili paste, mix well. Cover it and let it cook on medium heat for 4-5 minutes. Add water and cook till kaddu cooked well.
  4. Add chopped tomatoes red chili powder, turmeric powder, coriander leaves chopped, sugar, salt and mix well. 
  5. Cook 2-3 minutes more then add crushed kasoori methi and mix well.
  6. Remove subji from the heat.  Serve with puri/roti.
