Quick Pulao | One Pot Vegetable Pulao

Quick pulao is one of the favorite dishes in my family. This is my mother recipe and she used to make this dish very often as we like very much. This is same as regular pulao but this is one pot dish which is an easy and quick version of my pulao dishes. This is a great meal for a lunch box or quick dinner.




INGREDIENTS: for 4-5 servings

Basmati rice ......................  1¼ Cup
Onion slices .......................... 1  Cup
Carrot pieces ........................ 1  Cup
Potato pieces ....................... ½ Cup
Peas fresh or frozen …........ ½ Cup
Cauliflower pieces ................. 1 Cup
Tomato chopped .................... 1 Cup
Ghee ....................................  4 Tbsp.
Cumin seeds .....................  ½ Tbsp.
Whole garam masala .. 2 pcs (Each)
Ginger paste .......................  1 Tbsp.
Green chili chopped ...........  2 Tbsp.
Turmeric powder ..................  ¼ tsp.
Salt ..............................  As per taste
Coriander leaves chopped ...¼ Cup
Water ................................  3½ Cup



DIRECTIONS:
  1. Wash basmati rice 2-3 times properly in running water and keep it aside.
  2. Take 3 tbsp ghee in a big pan and heat over medium flame.  Add cumin seeds, when cumin seeds crackle add clove, bay leaves, green cardamom, cinnamon stick (2 pieces each), saute’ for few seconds, then add onions.
  3. While sauteing’ onion, add little salt and ginger paste and mix well.
  4. Then add peas, potato and carrot slices and mix well.  Cover it and let it cook over medium heat for a couple of minutes. Then add cauliflower pieces, green chili chopped and mix well. Cook for minutes then add washed basmati rice, water, salt, turmeric powder, and mix well, cover it and let it cook on medium flame.
  5. When rice and vegetable almost cooked add chopped tomatoes and coriander leaves.
  6. Mix well and cook for 4-5 minutes more.
  7. Remove pan from the heat and let it simmer for 10 minutes.
  8. Serve hot with yogurt or kadhi.
