Sambhar | Sambar

Sambhar or Sambar is an Integral part of south Indian dishes. It is served with dosa, idli, vada, upma or rice. It is made using yellow lentils, vegetables, and aromatic spices.




INGREDIENTS: for 6-8 servings

Toor dal dry ........................  1  Cup
Tomato cubes .....................  1 Cup
Onion slices ......................... 1 Cup
Long squash cubes ...........  1  Cup
Drumstick 2 Inch slices ...........  6-8
Oil ....................................... 5 Tbsp.
Red Whole chili  .........................  3
Asafoetida ............................  1 tsp.
Mustard seeds ..................  1 Tbsp.
Curry leaves ............................ 6-7
Sambhar powder ..............  ¼ cup
Red chili powder ...............  1 Tbsp
Tamarind paste ................  ½ Tbsp.
Jaggery or sugar ...............  1 Tbsp.
Salt ............................ As per taste
Water ........................... As needed


DIRECTIONS:
  1. Wash the dal thoroughly and drain. Then pressure cook with salt and 3 cup water for 4 whistles. 
  2. Take it out from the heat and let it cool before opening pressure cooker.Blend the dal using a hand blender till it is smooth and keep aside. 
  3. Heat oil in a deep big pan. Add mustard seeds when mustard seeds crackle add red chili whole, asafoetida, and curry leave. 
  4. Then add onions and sauté on a medium flame for 1 minutes. Add long squash cubes, drumstick and cook for a couple of minutes. 
  5. Then add tomatoes, sambhar powder, red chili powder, salt as per your taste and 3 cups of water and cook for 2 to 3 minutes. 
  6. Add the prepared cooked Toor dal and mix well with vegetable. Add more water as needed and cook on a medium flame for some time. 
  7. Then add jaggery and tamarind paste and let it simmer for 10 to 15 minutes more. 
  8. Now sambhar is ready for serve.Serve hot with idly or dosa.
