Tindora Subji | Ivy Gourd Subji

This tindora/ivy gourd recipe makes delicious subji with the minimal of ingredients and a flavor to die for. It is rich in beta-carotene and hence nutritious. It is also good for diabetics as it helps regulate the insulin metabolism. This subji is very simple to make yet very delicious.



INGREDIENTS: for 2-3 servings

Tindora slices ..........................  4 Cup
Oil ..........................................  2 Tbsp.
Mustard seeds ..........................  1 tsp.
Cumin seeds ............................  1 tsp.
Red chili powder ................... ½ Tbsp.
Turmeric powder ...................... ¼ tsp.
Salt ................................  As per taste
Coriander chopped ...............  3 Tbsp.


DIRECTIONS:
  1. Heat oil in a pan and add mustard seeds. When mustard seeds crackle, add cumin seeds, and tindora slices and mix it well. 
  2. Put the lead on and let it cook on medium heat until tindoras are tender. Stir every few minutes to cook evenly and prevent burning. 
  3. After tindora, almost cook add red chili powder, turmeric powder, salt and mix well. Cook for 2-3 minutes more.Then take it out from heat. 
  4. Now add coriander chopped on top and serve hot with roti.
