Vegetable Pulao | Mix Vegetable Pulav

Vegetable pulao is a versatile dish of India. There are many different ways to make vegetable pulao, here is my recipe for making pulao. This pulao is simple, flavorful and have a good amount of vegetables. Basmati rice plays an important role in the pulao. Ghee performs the main role to the dish as it raises aroma and flavor of basmati rice. It is served with yogurt or raita.


INGREDIENTS: for 4-5 servings

Basmati rice ......................  1¼ Cup
Onion slices ......................... 1  Cup
Carrot slices ......................... 1  Cup
Potato slices ......................... ½ Cup
Peas fresh or frozen ............. ½ Cup
Cauliflower  pieces ............... 1 Cup
Tomato Chopped ................... 1 Cup
Ghee ...................................  4 Tbsp.
Cumin seeds .......................  1 Tbsp.
Whole garam masala .. 2 pcs (Each)
Ginger paste .......................  1 Tbsp.
Green chili chopped ...........  3 Tbsp.
Salt ..............................  As per taste
Coriander leaves chopped ... ¼ Cup
Mint leaves chopped ..........  2 Tbsp
Water ................................  5-6 Cup



DIRECTIONS:
  1. Wash and soak basmati rice for about 1 hours. 
  2. Boil 5-6 cup of water over high flame . when water is enough hot add basmati rice and peas with a little salt. Also, add 1 tsp ghee, and cook until each grain separates and fully cooked. Drain excess water and keep the rice aside. 
  3. Take 3 tbsp ghee in a big pan and heat over medium flame. Add cumin seeds, when cumin seeds crackle add clove, bay leaves, green cardamom, cinnamon stick (2 pieces each), saute’ for few seconds, then add onions. 
  4. While sauteing’ onion, add salt, ginger paste and mix well. 
  5. Then add potato and carrot slices and mix well. Cover it and let it cook over medium heat for a couple of minutes. Then add cauliflower pieces and cook over medium heat. 
  6. After vegetables are almost done add tomatoes, green chili chopped, little more salt and mix well. Cook for 2-3 minutes more then adds cooked basmati rice, chopped mint, and coriander. Mix well, cover it and let it simmer for few minutes. Remove pan from the heat. 
  7. Serve hot with yogurt or raita.
