Vegetable Thepla | Vegetable Paratha

Vegetable thepla made from carrots, peas green beans and corn, are very nutritious and contain a range of important vitamins. Wheat flour and Gram flour used in this recipe, adds to the nutritive value. Ginger, garlic, cumin seeds, turmeric, and asafetida add flavor and make the theplas easier to digest.



INGREDIENTS: for 15 Theplas

Wheat flour .....................  1½ Cup
Gram flour ........................  ½ Cup
Oil ...................................... 3 Tbsp.
Carrot crushed .................. ½ Cup
Corn crushed .................... ½ Cup
Peas crushed .................... ½ Cup
Green beans crushed ....... ½ Cup
Ginger paste .......................  1 tsp.
Garlic paste ......................  1 Tbsp.
Green chili paste ..............  1 Tbsp.
Mustard seeds ....................  1 tsp.
Cumin seeds .......................  1 tsp.
Asafoetida ..........................  ½ tsp.
Turmeric powder ................  ¼ tsp.
Red chili powder .................. 1 tsp.
Salt .............................  As needed
Oil  ..............................  As needed

DIRECTIONS:
  1. Take 3 tbsp oil in a pan and heat it up. Add mustard seeds, when seeds crackle add cumin seeds, asafoetida, ginger, garlic and green chili paste and saute’ well until the raw smell goes away. 
  2. Add crushed corn, carrot, peas and green beans. Mix well and cook for 3-4 minutes. 
  3. Then add red chili powder, turmeric powder, and salt. Mix well all ingredients and take it out from heat and keep it aside for completely cool down. 
  4. Take wheat flour and gram flour in a bowl, add salt and mix it well. Add vegetable mixture and knead into a hard dough. (If needed add little water). 
  5. Divide the dough into 15 equal portions. Apply whole wheat flour to the ball. Now start rolling the ball into flat 6” round. Alternatively, you can also dust the rolling board with flour. 
  6. Now put the thepla on a hot Tawa. First, cook one side. It should be less than half cooked. Turn and cook the other side. This side should be a completely cooked till light golden spots appear. 
  7. Then apply some oil on first sides of thepla, turn and cook till light golden spots appear. Then remove thepla from the heat. Prepare all remaining theplas same way. 
  8. Vegetable thepla can be enjoyed with tea, coffee or yogurt.


Note:  You can use 2 cup of crushed frozen Mix Vegetable instead of carrot, corn, peas and green beans separately.
