Wheat Laddoo | Gujarati Churma Ladoo | Churma Laddu

Wheat Laddoo is traditional Gujarati sweet often made on festivals and religious occasions. This is also called Gujarati Churma Laddoo. This mouth watering and delicious laddoo are very similar to Rajasthani Churma. This laddoo recipe needs wheat coarse, suji, gram flour, ghee, sugar, cashew,  sakar crystal, raisin, cardamom powder and poppy seeds.



INGREDIENTS: for 18-20 laddoo

Wheat flour coarse ................  1½ cups
Gram flour .................................  ¼ cup
Suji coarse ................................. ¼ cup
Milk ...................................   As needed
Ghee melted .........................  1½ cups
Sugar ......................................   2 cups
Cashew pieces .......................   3 Tbsp
Raisin .......................................  3 Tbsp
Sakar crystal ...........................   2 Tbsp
Oil / Ghee ...................  For deep frying
Cardamom powder .................  ½ Tbsp
Nutmeg powder ..........................  1 tsp.
Poppy seeds.......................  As needed


DIRECTIONS:
  1. Take gram flour, sooji, and 3 tablespoon ghee in a pan. Put the pan on medium high heat and stir well. Stir the mixture continuously with a spatula to prevent burning. Cook until it turns golden brown color. 
  2. Turn off the stove. Remove the pan from the heat and let the mixture cool down for 20 min at room temperature. 
  3. Take course wheat flour in a big bowl add suji, besan mixture and mix well. Then add milk and make hard dough. Cover it and keep aside for 30 min. 
  4. Make 8 equal parts out of dough. Take one part of the dough and with your fingers flatten the edges and make into a 3-inch circle. 
  5. Heat the oil or ghee in a pan on medium-low heat. Fry 4 at a time on medium-low heat. Fry until golden-brown on both sides. It will take 6-7 minutes.If the dough is fried on high heat, they will be raw from inside and laddoos will not turn out good. 
  6. After frying all of that let it cool for 30 min. After 30 min broke them into small pieces. And put in food processor to make a fine powder. Strain this in strainer. So you can remove a lump from them. 
  7. Now add sugar, cardamom powder, broken cashew, raisin, sakar crystal, nutmeg powder into the mixture. 
  8. Take ghee in the pan and hit it on medium flame. When Ghee is getting hot take out the pan from the hit and pour all into the mixture. Mix all well with the spoon. 
  9. To make the laddoos, take about a  cup of warm mixture into your palm. Gently press the mixture between your palms to form a smooth, round ball. The laddoos are very in size so you can adjust the size as you prefer. 
  10. Take poppy seeds in one plate and rub laddoo around into the plate, so laddoo will garnish with poppy seeds. 
  11. Leave the laddoos on the plate to cool down completely before storing in airtight container. The laddoos can be stored in an airtight container for about 2 weeks.
