Quinoa Brown Rice Pulao| Quinoa Pulao| Quinoa Vegetable Pulao
INGREDIENTS: for 4-5 servings
Quinoa ... ............................. ½ Cup
Brown rice ............................ ½ Cup
Water ...................................... 4 Cups
Carrot slices ............................. 1 Cup
Green peas ............................. ¼ Cup
Broccoli pieces ......................... 1 Cup
Cut corn ................................. ¼ Cup
Onion slices ............................. 1 Cup
Tomato chopped ..................... 1 Cup
Red pepper slices ................... ½ Cup
Oil .......................................... 3 Tbsp.
Cumin seeds ........................ ½ Tbsp.
Ginger paste .......................... 1 Tbsp.
Turmeric powder .................... ¼ Tsp.
Green chili slices .................. ½ Tbsp.
Red chili powder .................. ½ Tbsp.
Salt ................................. As per taste
Coriander leaves .................... ½ Cup
Chia seeds ............................ 3 Tbsp.
DIRECTIONS:
- Wash and soak brown rice for 2-3 hours.
- First, cook brown rice in 4 cups of water in rice cooker. After 15 minutes add peas, carrots, corn and mix it well. Cook for 10 minutes then adds washed Quinoa and salt. Mix well, cover it and cook till it done. Keep it aside for 1 hour for complete cooldown. Unless it will become sticky. (You can also boil brown rice, vegetables, and quinoa in a pan and then strain water and keep it aside for cool down).
- Heat Oil in pan over medium flame. Add cumin seeds, when cumin seeds crackle add onions.
- While sauteing’ onion, add salt, green chili slices, and ginger paste.
- Add broccoli pieces and mix well. Cover it and let it cook over medium heat till broccoli are a half cook.
- Now add red pepper slices and mix well. Cover it and let it cook for some time.
- After vegetables are almost done add tomatoes, red chili powder, turmeric powder, and mix well. Cook for 2-3 minutes more then add cooked Quinoa-Brown rice. Mix well, cover it and let it simmer for few minutes. Remove pan from heat.
- In the last add chopped coriander leaves and Chia seeds.
