Quinoa Fried Rice | Healthy Fried Rice | Fried Quinoa with Rice and Vegetables

This tempting and colorful fried rice prepared with Quinoa, kali jeera rice, chia seeds and lots of vegetables. Yes, this is nutrition power house. I added almost everything I can add to make this healthier and delicious. Vegetables like zucchini, broccoli, peas, corn, and carrot make this dish colorful. So, try this recipe and make this amazing fried rice.




INGREDIENTS: for 5-6 servings

Quinoa  ... ..............................  ¾ Cup
Kali Jeera rice ........................  ¾ Cup
Water .................................. 3½ Cups
Carrot slices ............................ 1 Cup
Green peas ...........................  ½ Cup
Cut corn ................................  ¼ Cup
Onion slices ............................ 1 Cup
Oil .........................................  4 Tbsp.
Cumin seeds ......................  ½  Tbsp.
Ginger paste .........................  1 Tbsp.
Green chili paste ..................  ½ Tbsp.
Broccoli pieces ..................... 1½ Cup
Zucchini pieces ...................  1½ Cup
Salt ...............................  As per taste
Chopped Coriander leaves .... ½ Cup
Chia seeds  ...........................  ¼ Cup


DIRECTIONS:
  1. First cook peas, carrots, corn in 1 cups of water in rice cooker. After 10 minutes add washed Kali Jeera rice and Quinoa. Add salt and 2½ cups of more water and mix well. Cover it and cook till it's done. Keep it aside for 1 hour for complete cooldown. Unless it will become sticky. (You can also boil rice, vegetables, and quinoa in a pan and then strain water and keep it aside for cool down). 
  2. Heat Oil in pan over medium flame. Add cumin seeds, when cumin seeds crackle add sliced onions.
  3. While sauteing’ onion, add salt, green chili and ginger paste.
  4. Add broccoli pieces and mix well. Cover it and let it cook over medium heat till broccoli are a half cook.
  5. Now add zucchini pieces and mix well. Cover it and let it cook for some time.
  6. After vegetables are almost done add cooked quinoa-rice and mix well.
  7. In the last add chopped coriander leaves and Chia seeds.
