Rajwadi Khichdi | Shahi Khichdi | Vaghareli Khichdi

An amazing khichdi made from rice and toor dal. This khichdi made with desi ghee which gives a rich flavor and taste. Green peas, eggplant, potato, cashew nuts, and spices are used to add volume and flavoring to the khichdi. Enjoy this unique and rich khichdi with fresh yogurt.



INGREDIENTS: for 4-5 servings

Basmati rice ...........................  1 Cup
Toor(Arhar) dal .....................  ½ Cup
Potato pieces .........................  1 Cup
Eggplant pieces ...................... 1 Cup
Green peas ........................... ½ Cup
Ghee  .................................... 5 Tbsp.
​Mustard seeds .......................... 1 tsp.
Cumin seeds ............................ 1 tsp.
Fenugreek seeds .................. 1 Tbsp.
Clove .........................................  3-4
Whole red chili .............................  2
Cinnamon stick .............................  2
Asafoetida ..............................  ½ tsp.
Cashew pieces .....................  ½ Cup
Red chili powder ...................  1 Tbsp.
Turmeric powder ....................  ½ tsp.
Salt ................................ As per taste
Water ....................................  4 Cups
Ghee ............................  For servings



DIRECTIONS:
  1. Wash basmati rice and toor dal together for 2-3 times.
  2. Heat ghee in the pressure cooker adds mustard seeds. When mustard seeds crackle add fenugreek(methi) seeds, cumin seeds, asafoetida, clove, cinnamon stick and whole red chili.
  3. Add green peas, eggplant pieces, potato pieces and saute on a medium flame for 1 minutes.
  4. Add washed rice and dals, red chili powder, salt, turmeric powder, water and mix well.
  5. Then pressure cook for 4-5 whistle.
  6. Take it out from heat and let it cool for 10-15 minutes before opening pressure cooker.
  7. Garnish with ghee and serve with papad and yogurt.
