Rajwadi Khichdi | Shahi Khichdi | Vaghareli Khichdi
INGREDIENTS: for 4-5 servings
Basmati rice ........................... 1 Cup
Toor(Arhar) dal ..................... ½ Cup
Potato pieces ......................... 1 Cup
Eggplant pieces .................. 1½ Cup
Green peas ........................... ½ Cup

Ghee .................................... 5 Tbsp.
Mustard seeds .......................... 1 tsp.
Cumin seeds ............................ 1 tsp.
Fenugreek seeds .................. 1 Tbsp.
Clove ......................................... 3-4
Whole red chili ............................. 2
Cinnamon stick piece .................. 1
Clove ......................................... 3-4

Asafoetida .............................. ½ tsp.
Cashew pieces ..................... ¼ Cup
Cashew pieces ..................... ¼ Cup
Red chili powder ................... 1 Tbsp.
Turmeric powder .................... ½ tsp.
Salt ................................ As per taste
Water .................................... 4 Cups
Ghee ............................ For servings
DIRECTIONS:
- Wash basmati rice and toor dal together for 2-3 times.
- Heat ghee in the pressure cooker adds mustard seeds. When mustard seeds crackle add fenugreek(methi) seeds, cumin seeds, asafoetida, clove, cinnamon stick, and whole red chili.
- Add green peas, eggplant pieces, potato pieces and saute on a medium flame for 1 minute.
- Add washed rice and dals, red chili powder, salt, turmeric powder, water and mix well.
- Then pressure cook for 4-5 whistle.
- Take it out from heat and let it cool for 10-15 minutes before opening the pressure cooker.
- Garnish with ghee and serve with papad and yogurt.
