Minestrone Soup / Italian Soup

Minestrone soup is very filling and healthy and especially in winter, this soup is sure to warm your soul with its savory flavor and wonderful aroma. This hearty, popular Italian soup is packed with vegetables, beans, and pasta, this soup is a meal in itself.



INGREDIENTS: for 5-6 servings

Olive oil  .............................  3 Tbsp
Minced garlic......................  1 Tbsp
Diced onions ......................  1 Cup
Diced celery .......................  ½ Cup
Chopped tomato ...............  2 Cups
Vegetable stock ................  6 Cups
Salt .............................  As needed
Black pepper powder ..  As needed
Italian mix ..........................  1 Tbsp
Italian green beans ……......  1 Cup
Zucchini pieces ...................  1 Cup
Carrot thin slices ................  ½ Cup
Cooked shell pasta .............  1 Cup
Boiled red kidney beans ...  2 Cups
Chopped spinach ..............  2 Cups
Romano or Parmesan cheese


DIRECTIONS:

  1. Heat olive oil in a big pan. Add diced onions and cook until translucent, about 2-3 minutes. Add the minced garlic and cook 30 seconds. Add diced celery and cook another 3-4 minutes on medium heat.
  2. Add vegetable stock to the pot and bring to a boil. Reduce the heat to medium low and simmer 10 minutes.
  3. Add carrot thin slices, zucchini pieces and Italian green beans trimmed and cut into 1 inch pieces. Cook until vegetables are tender, about 15-20 minutes.
  4. Add salt, black pepper powder and mix well. Crush Italian mix with hand and add into soup.
  5. Add chopped tomato, boiled red kidney beans and cooked shell pasta. Reduce the heat to medium low and simmer 10 minutes. 
  6. In the last add chopped spinach. Remove pot from the heat.
  7. Ladle into bowls and top with the Romano or parmesan cheese and serve.
