Handvo is a traditional Gujarati savory cake, which is made so many ways. Today we are making Quinoa Handvo along with long squash, carrot, and cucumber. Grated vegetables make this Handvo very soft and tasty and Quinoa makes this Handvo very healthy. This Handvo recipe is a baked version so you can make this traditional Gujarati snack without any hassle.

INGREDIENTS: for 3-4 servings

Quinoa ............................... 1 Cup
Handva flour ..................... ½ Cup
Yogurt ............................... ½ Cup
Shredded bottle gourd …... 1 Cup
Shredded cucumber …..... ½ Cup
Shredded carrot ……….... ½ Cup
Red chili powder .............. 1 Tbsp
Sugar ............................... 2 Tbsp
Turmeric powder ............... ¼ tsp.
Salt .......................... As per taste
Eno ................................. ½ Tbsp
Water ........................ As Needed

For Tempering

Oil ................................ 4 Tbsp
Whole dry chili …….....…….. 2
Mustard seeds ............ ½ Tbsp
Sesame seeds ............. 3 Tbsp
Curry leaves chopped ..... 8-10
Asafoetida ..................... ½ tsp.


DIRECTIONS:

  1. Dry roast Quinoa and keep it aside to cool down. After it completely cools down make a coarse powder.
  2. Take yogurt in a pan and make thick buttermilk to adding enough water. Put it on low flame heat for 1 minute and then take it out from heat. Make it a little warm, not hot.
  3. Add quinoa powder and Handva flour. Mix well and make a thick paste adding more water if needed. Cover it and keep in a warm place for 4-5 hours for fermentation.
  4. After ferments add turmeric powder, red chili powder, salt, sugar, shredded bottle gourd(dudhi), shredded cucumber, shredded carrot and mix it well.
  5. Preheat the oven to 400 degrees F.
  6. Heat oil in the pan and add mustard seeds and when it starts to crackle, add sesame seeds, asafoetida, whole red chili, chopped curry leaves.
  7. Pour half of this tempering into the Handva batter and mix well.
  8. Sprinkle Eno on the batter and mix well. Pour batter into greased baking pan. Drizzle remaining oil tempering top of the Handva batter.
  9. Now place the baking pan into a preheated oven for 40-50 minutes. When the crust seems brown, take it out from the oven.
  10. Let the Handva rest for 10-15 minutes then cut it into small square pieces.
  11. Remove pieces from the baking pan and serve with tea.
